For the ladies that are pregnant and/or breastfeeding in here, what are some of your favorite quick-fix, healthy meal recipes? Im getting bored with alternating between chili, spaghetti, taco salad, etc for dinner. Im a single mom & work full time, so by the time we get home around 5:30 Im getting hungry & dont want to spend a lot of time making dinner. Usually I try to make enough for leftovers to bring to work for lunch the next day, so recipes with good sized portions are a plus! 

Do you have any favorite things you add to your meals to give it that extra nutritional boost? I try to add flaxseed to my oatmeal for breakfast, and nutritional yeast to my dinner. If you're nursing do you still take any type of supplements? I intended on continuing to take my prenatal vitamins, but have been slacking & am debating on starting back up. I trust that I can get everything I need from the vegan diet, but just want to make sure Im taking advantage of the sources I have available to eat as healthy as can be. Ive been vegan for 4 years, but pre baby I lived off of vegan junk food & beer...so being healthy wasnt exactly part of my thought process.

Maybe you could carve out a few hours on a day off from work to do some intensive cooking? Then you could freeze/refrigerate the foods until you get to eat them during the week.

I eat a lot of nutritional yeast (on leftover rice, warmed with some oil), flax, and beans (I'm also GF.). Smoothies are fast, tasty and easy to slip a lot of stuff into- I usually add flax oil, spinach, fruit, and a vegan rice protein powder to mine. Hummus with rice cakes/bread/raw veggies is tasty and easy. Bean based chilis and soups are easy to make a lot of. I try to add a grain to most of my soups to make them more filling without the gluten from bread or crackers. I snack on seeds, nuts and trail mixes with an occasional larabar thrown in, plus lots of fruit while it is in season.

I still take a pre-natal vitamin, but I switched to a once a day pill when I ran out of the ones that are better adsorbe, but require me to take six pills a day. I also supplement my diet with veg*n sources of Vitamin D.

Thats a really good idea...I should start making a few different meals on the weekend so they're ready to eat during the week.

some idears.

Pita pockets

I take pita pockets and line them with hummus, chop up a cooked "chicken" patty and put it in there with greens (spinach, green leaf lettuce, or whatever you like), tomato, and sprouts. Other veggies can be added to this, too. Can also be made cheaper without the fake chicken.

Chili mac

yes, it is two things you are sick of but sometimes it is enough of a change for me. Just pour chili over spaghetti noodles.

Bean and frito burritos

Tortilla, beans, salsa, fritos. yum. Can also be made by seasoning veggies or fake beef with taco seasoning.

Sloppy joes

I take fake beef and add a bunch of veggies chopped up really tiny (broccoli, peppers, shredded carrots) and add a can of sloppy joe mix.

pizza rolls/pizza bake

any kind of vegan pizza dough can be used. cut into rectangles, put sauce and chopped veggies on one side, fold and bake. I love these things.

I also make pizza bake with bisquick. Put a layer of bisquick down in an oiled baking pan. Cook it for a bit then add sauce and veggies and cook until it is crispy.

scrambled tofu

Extra firm tofu, cut up veggies, garlic, turmeric and whatever spices I feel like that day. I tend to cook it forever so it is not wet at all. Great on toast. (I think I am going to go make this right now. I am hungry.)

I also eat at least one bowl of cereal everyday with fortified soy milk.

Ya Im big into cereal lately-super quick, yummy!

Thank you for all of the meal ideas-they ALL sound scrumptious & Im totally wanting to try them all hehe. I get bored with how I make things, but something as simple as adding an extra ingredient (chili mac) works for me!!!
